Breakfast English-Muffin Pizza

• 1 whole-wheat English Muffin
• 1 small tomato, seeded and diced
• 1 teaspoon Virgin Olive Oil
• 1 thin slice (1/2 ounce) diced Canadian Bacon
• 1/4 cup shredded part-skim mozzarella 
• Chopped fresh basil, for garnish

Directions:

Preheat the oven to 450 degrees. Line a small baking sheet with foil. Place the English muffin halves cut-side up on the baking sheet. Top each with tomato and drizzle with the olive oil. Sprinkle the Canadian bacon over the tomatoes, then top with the mozzarella. Bake for 10 to 12 minutes, or until the cheese is melted and beginning to brown. Sprinkle with basil.

Less than a year ago I became pregnant with my son; my first child. I had been working in a restaurant as a bartender for several years. About 3 months into my pregnancy I had some complications and was put on bed rest till after my delivery. I knew i couldn't go back to work. I fell in love with my son. Peanut Butter Cookies

"This is definitely the easiest recipe ever!"

• 1 cup of peanut butter, smooth or chunky it doesn't matter
• 1 cup sugar, plus a little extra for tossing into
• 1 egg

Directions:

1. Heat oven to 375"F. Stir together the sugar, peanut butter and an egg in a large bowl
2. Roll dough into 1-inch balls in it to coat. Place two-inches apart on ungreased cookie sheets
3. Press each ball down with a fork to make a crisscross design. Bake for 10-minutes or until cookies just start to brown on the edges. Remove from the oven and let it cool. Makes about two dozen.
